Pignpineapple: The Covid Baby
In 2020, what began as a vacation to Washington state transformed into a rare opportunity to build something from scratch. Amid the quiet of a pandemic-era town, I launched PignPineapple, a pop-up dining experience serving bold, globally-inspired dishes to a close-knit, curious community. Beyond just cooking, I treated the pop-up as a product test — adapting in real-time to feedback, fine-tuning our offerings, and building local buzz through word-of-mouth. The result? We became the talk of the town. It was an early exercise in product-market fit, community engagement, and iterative creativity — all through the lens of food.
